Shochu

Shochu (焼酎) is a traditional Japanese spirit made from rice, barley, or sweet potatoes. With an alcohol content of about 25%, its flavor varies depending on the base ingredient: rice Shochu is mild, sweet potato Shochu is rich, and barley Shochu is light. Shochu can be enjoyed neat, on the rocks, with water, or with hot water. There are many well-known varieties, especially in Kagoshima.
